In the realm of the senses

[This is the second installment of my DUAN series referencing the 5 senses. Maybe it’s the third, I forget. I’ve gotta start writing these things down somewhere.]

According to the book “Taste and Smell: An Update” by Thomas Hummel, the seven most common flavors in food that are directly detected by the tongue are: sweet, bitter, sour, salty, meaty (umami), cool, and hot. But the tongue is not the only game in town when it comes to taste. Apparently, according to Hummel, the nose also plays a significant role in determining flavors, and the sensors in the nose can detect thousands of distinct “flavors”. And words…oh words…we use so many different words to describe tastes. Acidic, acrid, astringent, biting, bitter, briny, and on and on through savory and tart. Not to mention the panoply of words associated with mouth feel. Just the words “mouth feel” conjure up a universe of sensation.
