Deadsplinter Up! All Night: Tea for One

I can hear the random clink of one fork against a plate.

OK, this is a FYCE request embedded in a DUAN and wrapped in an enigma. I’ve still got three weeks until my dear wife comes home, and I’m tired of eating the same darn thing for dinner every night. Chicken thighs, cauliflower and brocolli, and a sweet potato. I mean, it’s a good meal, but it’s gotten goddamn boring. So here are my special dietary needs: I need a meal with meat and vegetables (no rice or pasta) but here’s the tricky part: It has to be able to go into the oven and then come out in ONE HOUR. That’s really important because the time between when I put it in the oven and when it comes out is my very special nap time when I put on the ball game and drift into oblivion. Also, it’s best if the prep is really easy because I don’t find cooking by myself that great of an enjoyment. If it tastes good that great and all, but it’s probably a few slots down on my list of requirements. You fine Deadsplinter folks are my support system for these long stretches of solitude, so I’m counting on you. But by all means, posting music in tonight’s DUAN is still something I need because man cannot live on chicken thighs alone (I probably can but I don’t want to).

  1. you know…. you could eliminate your one hour need……by getting an oven with a timer

    you know….you just tell them what time you want them to start cooking….and they do….long as what you want to eat is in there when it starts cooking…you are golden.

    The basic idea is chop an onion, saute it in olive oil, add some garlic if you want, add about a pound or so of green beans either fresh or frozen, and a can of crushed tomatoes or tomato sauce. Salt and pepper to taste. Add some fresh or dried oregano, dill or parsley if you want.

    Sock it in the oven for about an hour at around 300 degrees. Put a cover on but crack it a bit to let the steam out.

    The beans should come out nice and soft and the tomatoes should have reduced to a thicker sauce.

    You can bake it with chicken, pork or lamb mixed in if you want. You can bake it with chopped potatoes mixed in if you want. You can top it with feta if you want.

  3. Ingredients needed:

    Pork tenderloin, silverskin trimmed off

    chopped veggies of your choice – could be small potatoes, onions, bell peppers, cauliflower, whatever

    olive oil, seasoning of choice

    Materials needed:

    oven, sheetpan, parchment paper (optional, makes cleaning easier)

    Turn oven on to 400, while preheating toss the veggies in the olive oil and seasonings, arrange on 2/3 of the sheet pan. Do the same with the pork tenderloin, arrange on the other 1/3 of the sheet pan. Bake for 20-25 minutes, let rest for a few minutes, enjoy. 18-20 minutes if you like pork medium-rare.

    • That’s good.  Now, on @farscythe‘s advice I’m going to figure out how to set my oven to turn on when I’m 40 minutes into my nap.  I’ll bet I can find a manual on the google somewhere.
