Mondays can suck, and really any day can be annoying. Do you have any easy shortcuts you fall back on to make something easier?
I am a strong devotee of Trader Joe’s Cruciferous Crunch shredded blend. It’s basically shredded kale, brussels sprouts, and cabbage. Maybe shredded broccoli stems in there too. I don’t remember. Anyways, it makes the easiest slaw, or sauteed greens, or veggie component for a chopped salad with a vinaigrette.
Best part is no chopping or prep work!
Lazy man’s creamy Noodles. I take a can of low salt Campbell’s Cream of Celery dump the contents into a bowl with a little water, heat it up in the microwave for a minute, add some of pasta water and then dump into the pot with noodles. Voila I have a cheap side dish.
Generally I don’t like low salt Campbell’s but I use it for noodles because otherwise the soup concentrate is too damn salty (and I like salt!)

I’ve pretty much given up on whole heads of lettuce and just gone to bagged greens. There is enough waste in whole lettuce that I’m not sure it’s such a good value.
Yeah, I’m with you.  I used to buy the 3 pack of  romaine but without my girls home, we can’t even get through one head.  I have trouble with the bags of spinach not going bad before I get through them too.
Yeah I used to buy heads of romaine too.
Now I just buy the Mediterranean salad kits from Costco usually if I want salad in summer or winter.
Normally spring and fall I have either spinach or lettuce growing, so that’s convenient.
I use to like Trader Joe’s but the parking lot is always fucked!  They are opening a new one at a former Sears which actually has a real parking lot so I may revisit when they move.
I’m so glad to know it’s not just the ones around me. They have things like weird access ramps in and out with terrible visibility and super tight turns because regular street access is unacceptable for some reason.
Wtf is up with that? My friend scraped the side of her car in one of their underground parking lots. Now she avoids shopping there during stressful times of day or near holidays.
I just looked it up, and the official company line is they have small lots because they have small stores compared to most grocery stores.
Which is BS, because plenty of even smaller chain stores like pharmacies and cell phone stores manage to find locations sharing reasonable parking lots with a bunch of other stores.
We’ve started getting grocery delivery. Time is too precious to waste at the store, blood pressure is too high to fight crowded aisles, limited registers, long lines, and difficult to find products. The delivery comes from a delivery-only store; they keep a greater variety of products, you know in advance if they have it, and the delivery fee is negligible. Even with a tip for the delivery person it is more than worth it.
Oh that’s nice!! I know also if I go to a store, I end up buying things not on the list that grab my attention pretty often so reducing that would help the overall costs too!
I loved the cruciferous vegetable bags from Trader Joe’s. I wish they’d bring one to my area. Now, the best I can do is the sweet kale w/ chopped cabbage, broccoli bits and brussels sprouts from the Walmart.
