this was supposed to turn up sometime last weekend but my phone picked the perfect time to up and die on me….anyways…now armed with a fresh new battery…it finally let me get to the damn pictures
anyways as you could probably tell by the featured image…this is an apple pie…every country has one…this ones the dutch version
sooo…what you will need
flour, 500gr
bakingpowder, 1tsp
butter, 250gr
caster sugar, 220gr (we call it basterd sugar over here…fun name)
eggs, 2
apples,2kg i use elstar but most any apples are fine tho obv does change the flavour some
granulated sugar, 75gr
cinnamon, to taste (enough to lightly coat the apples in my case)
raisins, to taste (i had a 200gr bag of them and chucked em all in)
and an 11inch springform to chuck it all in
anyways…
preheat the oven to 170c (or 340f)
grab a mixing bowl,chuck the flour into it,cut the butter up in to a few chunks and lob that in there too along with the caster sugar and one egg
knead it all together till you end up with a big delicious doughball
chuck some bread crumbs in to the springform and then use about 2/3rds of the doughball to make the base
be sure to play this song whilst making the base….its vitally important
right! yeah…umm…anyways…time to grab another mixing bowl…or use the same one…see if i care.
peel and core the apples then chop em in to chonky chonks and chuck em all into the bowl,chuck your cinnamon,granulated sugar and raisins in with them and mix em all up good and proper like
then tip the whole thing into your now base filled springform
flatten the remainder of your dough ball to make strips to lay on top in a crossed pattern, then whisk up your remaining egg and use a brush to paint the strips…just to make it brown nicer
then shove the whole thing into the oven for 1 hour
leave it to cool for a wee bit before removing the springform
and hey presto!
typically served with a generous helping of whipped cream
fair warning tho….a decent sized slice of this and a cup of coffee is closer to being a damn meal than it is to being a snack
