Food You Can Eat: Artichoke Stuffed Mushrooms

This recipe is from All Recipes. I doubled the serving size and used it as a main course.

Ingredients

1 tablespoon olive oil

1 onion, chopped

24 mushrooms, stems removed and chopped

salt and ground black pepper to taste

1 (12 ounce) jar marinated artichoke hearts, drained and chopped

1 (8 ounce) package cream cheese, softened

2 tablespoons sour cream

1 cup shredded Italian cheese blend

2 tablespoons grated Parmesan cheese

½ teaspoon garlic salt, or to taste

Directions

Preheat an oven to 350 degrees F (175 degrees C). Prepare a baking sheet with cooking spray.

Heat the olive oil in a skillet over medium heat; cook the onions and mushroom stems in the hot oil until the onion is translucent, about 5 minutes; season with salt and pepper. Transfer the mixture to a large bowl; add the artichoke hearts, cream cheese, sour cream, Italian cheese blend, and Parmesan cheese. Season with salt, pepper, and garlic salt. Stir the mixture until ingredients are evenly distributed. Stuff the mushroom caps with the mixture. Arrange the stuffed mushrooms on the prepared baking sheet.

Bake in the preheated oven until the filling begins to bubble, about 20 minutes.

  1. I am a huge fan of appetizers/cocktail food as meals. When we used to get rip-roaring drunk at my parties entertain we often used to put up a straggler or two overnight. The morning after they’d stagger out of the guest room or off the living room pullout couch or, a couple of times, when space was at a premium, off the floor in the office (blankets and pillows graciously provided) and I’d say, “I thought we’d have the leftover onion dip to start with. The dog hasn’t eaten all the leftover bread. And there are a couple of big hunks of cheese. And that champagne isn’t going to drink itself…”

      • I would love to, and I’m being sincere. I’m trying to organize a small college reunion/fundraiser, college friends and family only, but in this post-Covid world people seem to have forgotten that you can actually be physically present on a lovely planted rooftop. It’s like herding cats. My problem is compounded by the fact that so many of my college friends fled Manhattan (cowards) so now it’s like, “I think [my spouse and I] are coming into the City on the weekend of the [x]. Does that work for everyone?” The hell with it. Just PayPal/Venmo/Zelle/mail me a check and I’ll bundle it and direct it to the Financial Aid Fund. More artichoke-stuffed mushrooms for me!
