Food You Can Eat: Bacon and Brie on a Baguette

A quick and deceptively filling lunch

This is the open-face version, also highly recommended.

This is a kind of lame FYCE but it’s content and we must feed the beast.

Recently, Better Half’s boss came to town. She loves this one steakhouse so he told me he would order a big ribeye or filet mignon and bring home the leftovers that would be my late lunch. He’s done this before.

She surprised him by taking him to an omakase restaurant. That’s a Japanese restaurant with a multi-course tasting menu. You can’t really get leftovers out of that. So, after lunch, and feeling guilty, he stumbled across a place that had lots of refrigerated cabinets overflowing with pre-made sandwiches. Yes, friends, he managed to find a Pret a Manger. He picked one at random and brought it home. It was so delicious. This can be grilled or warmed up but I don’t recommend that.

Serves 2.

Fry three or four strips of bacon, not too crisp but not too floppy. Let them cool. Put them in the fridge if you want.

Slice a mini-baguette, about 7 or 8 inches long, in half, lengthwise.

Drizzle a little sriracha dressing on each side. Put the bacon on one of the baguette halves. Slice three or four Roma tomatoes very thin. Use your mandoline for best results. Slice brie into strips and tile them on top of the tomatoes. Top with arugula, then put the other baguette half on top and push down. Slice your sandwich in half and share with your lunch companion. This sounds very skimpy but believe me it is more than enough. Serve with rosé. Think existential thoughts. Is Gérard Depardieu dead or alive? Exactly how Fascist is Marine LePen and her RN party?
