I love a good deviled egg, and who among us does not? Since I was going to do something slotted in around Memorial Day I did a little rooting around and found this gem on the food.com site. They are deviled eggs that are supposed to taste like Buffalo chicken wings. And why not serve these at your Memorial Day cookout? I have not made this yet but I assure you I will. I don’t know how common buffalo sauce is but a couple of my supermarkets carry it, and around here they often don’t carry incredibly common items, or they carry maybe two or three types of something whereas in the suburbs there would be two or three dozen to choose from.
Couldn’t be simpler:
Hard-boil a dozen eggs, let cool, then peel and halve lengthwise. Scoop out the yolks; mash with 1/4 cup each mayonnaise and finely chopped celery and 2 tablespoons Buffalo sauce. Spoon into the egg whites and top with crumbled blue cheese and chopped celery leaves.
I make deviled eggs with avocado* instead of mayo (I hate mayo and don’t keep it in the house) and this sounds like a great flavor to add.

I, personally, love blue cheese, but I know it provokes food reactions like a surprising number of things do. Not among many of my friends or dinner guests, thankfully. And it’s vegetarian, which helps. Thumbs down (in my case: cilantro) or thumbs up (in my case: avocado) but everything else is fair game!
@matthewcrawley Eggs aren’t high on the list of things to eat for heart attack and diabetes, but i think that they look divine! Please report back on them after you’ve made them. Also, I too am Team Bleu Cheese.
This is no doubt TMI but I am the King of Overshare. I have been hospitalized five times in the last four years. Nothing lethal, and for reasons that were somewhat diagnosable, but certainly not curable. I’ve also done two extended stints at a physical rehab. All this time, the weeks and weeks and weeks, if I got a say in food choices I always went for the hard-boiled egg(s) for breakfast. I once asked, “I thought I was on the ‘healthy diet’ list. What’s up with the eggs?”
“Oh, you’re fine. Most of our patients are—anyway, we just put everyone down for ‘restricted diet’ and then when we get to know you we evaluate. There’s no reason for you to be on the restricted diet. I certainly couldn’t live on it.”
No luck getting a fifth of hooch, however, which is what really would have healed what ailed me.

Side note – devilled eggs made with avocado instead of mayo, seasoned with ancho and cayenne pepper, and topped with chopped cilantro? Amazing.
