
Well then – this is a classic southern cake that is beyond delicious. You can substitute any dark soda, such as Dr. Pepper, Pepsi, or root beer for Coke. You can also increase the cinnamon to a full teaspoon for a little kick. There are a ton of recipes for this on the internet, with little variation – this version is a winner.
Ingredients:
CAKE:
- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 can (12 ounces) cola
- 1 cup butter, cubed
- 1/4 cup baking cocoa
- 2 large eggs, room temperature
- 1/2 cup buttermilk*
- 1 teaspoon vanilla extract
GLAZE:
- 1 can (12 ounces) cola
- 1/2 cup butter, cubed
- 1/4 cup baking cocoa
- 4 cups confectioners’ sugar, sifted
Directions:
Preheat oven to 350°. Grease a 13×9-in. baking pan.
In a large bowl, whisk the first 5 ingredients. In a small saucepan, combine cola, butter and cocoa; bring just to a boil, stirring occasionally. Add to flour mixture, stirring just until moistened.
In a small bowl, whisk eggs, buttermilk and vanilla until blended; add to flour mixture, whisking constantly.
*If, like me, you do not keep buttermilk on-hand, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 1 cup milk, left to stand for 10 minutes. Adjust amounts as per recipe requirements.
Transfer to prepared pan. Bake 25-30 minutes or until a toothpick inserted in center comes out clean.
The best I can do is dream about eating these brownies.
You just unlocked a childhood memory of a Canadian children’s game show from the 80’s. The fun part was when the mom’s had to eat whatever the kids “cooked/baked”. I remember thinking “These kids are so dumb for pouring Coke into their mix especially 2L of it.” Over three decades later, I now know that you can in fact bake with Coke but 2L is not the way to go. In my possibly faulty memory, the kids were cooking shepherd’s pie and not cake.
