Food You Can Eat: Feta Pasta Bake

Easy and tasty.

Super easy, super tasty. Even carnivores will like it. (Or you could add cooked hamburger or chicken when adding the pasta, or sprinkle with bacon.)


     2 pints cherry tomatoes

    ½ cup sliced red bell pepper

    ½ cup sliced red onion

    ½ cup olive oil

    4 cloves peeled garlic, or more to taste

    2 tablespoons freshly squeezed lemon juice

    1 tablespoon lemon zest

    ½ teaspoon red pepper flakes

    ½ teaspoon freshly ground black pepper

    ½ teaspoon Italian seasoning

    ½ teaspoon dried basil

    ¼ teaspoon sea salt

    1 (8 ounce) package Cheese, feta

    1 (12 ounce) package penne pasta

    1 cup baby spinach


Preheat the oven to 400 degrees F. In a 13×9-inch baking dish combine cherry tomatoes, bell pepper, onion, olive oil, garlic, lemon juice, lemon zest, red pepper flakes, black pepper, Italian seasoning, basil, and sea salt. Add the block of feta cheese, flipping it to coat in the oil. Bake in the preheated oven, 40 to 45 minutes, so that the cherry tomatoes begin to blister and split.

About 15 minutes before the veggie/cheese mixture is ready, boil the penne pasta to al dente. Drain and reserve about 1 cup of the pasta water.

Remove feta-tomato mixture from the oven. Mix garlic, tomatoes, onions, and peppers with the feta cheese, creating a sauce. Stir in spinach and cooked pasta. The spinach will get cooked from the heat of the pasta sauce and pasta. Add pasta water as needed, to make a creamy sauce. Sprinkle (if desired) with a bit of Parmesan cheese.

    lotta lemonny stuff in there for my taste….but im the odd one out there….so i might just take one for the team and try this next week

    cant this week….im sorta kinda shielding as my work is a fucking plague pit right now

  2. This is REALLY close to the version that was *everywhere* on Tiktok at the beginning of the pandemic, and is now part of my *regular* rotation, if I find cherry/grape tomatoes inexpensively😉

    It’s SO versatile, and SO easy, for a “lazy supper” sort of evening!

    And if you can’t get a real (or good!) feta, you can sub in any soft, salty, “tangy” type of cheese–Chevre, Oaxaca, Oueso Fresco, Goat Cheese, etc!😁🤗🤤💖

    *That* type of versatility (like making Shakshuka, where you use *whatever* you have on hand!) is why I LOVE it!
