Food You Can Eat: Graham Bars

The most important ingredient is missing.

First things first:  This recipe comes courtesy of one of my grandmother’s older sisters, so a great aunt.  I don’t remember what she looked like, but I do recall seeing her at the occasional wedding and/or funeral.

A caveat before we get started:  I like graham crackers.  I like graham cracker crust.  I like graham cracker cake.  I like these bars well enough, but they could use some jazzing up.

Here’s what you’ll need:

16 Graham Crackers, rolled into crumbs

1 Cup Sugar

2 Eggs, beaten

1 Cup Nuts, chopped

½ tsp. Vanilla

Mix all ingredients together and press into a parchment-lined baking sheet. 

Bake in a 350-degree oven for 11-15 minutes.  Cut into bars when cool.

These have a nice, chewy texture and a pretty good flavor—but if I ever make these again, you can bet your sweet ass I’m adding chocolate chips.
