Food You Can eat: Healthy Apple Crisp

This is a tasty and not overly sweet dessert. It is nice for after a heavier meal, or if you are eating in a more heart-healthy way. Mr. BlackSmith made the pictured version one Saturday afternoon, while I was working.

Preheat the oven to 350 degrees. Core and slice 10 cups apples; no need to peel them. Arrange them in a 9×13 pan, so that there are even layers. Mix ½ cup sugar, 1 tablespoon flour, and 1 teaspoon cinnamon, and sprinkle it over the apples. Pour 1/2 cup water evenly over the apple mixture.

Melt 1/2 cup butter in a medium bowl. Stir in 1 cup quick oats, 1 cup flour, 1/2 cup packed brown sugar, 1/4 teaspoon each of baking powder and baking soda, and 1/2 cup chopped walnuts.  Crumble the mixture over the apples and bake for 45 minutes.

  • If serving to guests, topping it with a small dollop of whipped cream or ice cream sprinkled with cinnamon does make a lovely presentation.
  • Feel free to use white whole wheat flour, or even a course-ground flour.
  • Pecans make an excellent substitution for walnuts.

    (says the person that runs away from fruit)
    /me takes multivitamin tablets….that means i can now live on bacon alone and stay healthy
    (hey it makes about as much sense as some of the diet plans ive found on the interwebs)

    (dont mind me…i think its friday as im done with work for the year and as such am having a farscy party)

    • also…i kind of aplied half a cup of butter and sugar to the picture
      10 apples makes me think there might have been just a little bit more of that stuff than just that plate (well…i got there eventually)
      maybe healthy aint that much of a stretch

    • It was okay, Hannibal. Not his cooking – he did that just right – but it is definitely not as sweet as one usually thinks of with an apple crisp. Also, I hope that your solstice celebrations were peaceful and enjoyable.

      • It was a perfect Solstice, thanks. The sky cleared so I got to see the Great Conjunction. And my daughter told me she got to see it when she took her trash out, another thing that hasn’t occurred in 800 years.  All in all a good day!

         

      • You know, I stopped using as much sugar when I had my son and started really exploring the world of healthy snacks. And I honestly found that the less sugar I consumed, the more I tasted the smaller amount of sugar I did use. And now regular desserts often taste oversweet to me. It was actually funny on his birthday – I baked him a cake and used half of the sugar that the recipe called for. I thought it tasted great, but people from outside the household were less impressed haha. 

        • I’ve found this to be true for me as well.
