I would actually call these cupcakes. Do you remember a time when muffins had little to no sugar in them?
I make these with my kids because it’s an easy recipe and I’m trying to convince them that veges can be yummy… of course with heaps of sugar, anything is yummy. The banana and chocolate flavors are what come through.

Ingredients
1 ripe banana
1 zucchini
1 cup baby spinach (oops I used arugula and it was fine)
1 egg
2 tbsp milk
2 tbsp unsalted butter
1 tsp vanilla extract
1 1/4 cup flour
1/2 cup sugar (I cut that to 1/3 cup)
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1/2 chocolate chips
Directions
- Preheat oven to 350.
- Line/grease a muffin tin.
- Blend banana, zucchini, spinach, egg, milk, butter and vanilla extract in a blender.
- In a large bowl, mix the dry ingredients (except the chocolate chips).
- Gently mix in the wet mixture.
- Fold in the chocolate chips.
- Portion it out into a muffin tin.
- Bake for 23-26min.
- Let it cool for 10min.
Not a cupcake/muffin person, but those look great. We might have to try those.

I know what you mean about muffins being too sweet. There are cupcakes for that.
I literally just made a batch. It’s cooling right now and I won’t be able to taste test it because they are for my kid’s school. I used two zucchinis this time instead of spinach. Hopefully the sugar keeps it palatable for the kids.
I’m sure it will be fine! Zucchini doesn’t have much flavor to need covering.

I want to rehome myself. I’m so sick of being so sick. Which wears off and I’m the Medical Mystery but you live in a civilized part of the world. I’ve seen photos of your four beasts and I’m sure the Faithful Hound, who’s extremely social and enjoys a good road trip, would fit right in.
I don’t know about my 16,000 books or however many I have. Most of them are hardcover first editions, so I could sell some of them off to pay for my room and board. But I don’t know who’d want them at this point. It has become a very niche fetish, hardcover book collecting. I never thought this day would come.

It’s overstimulating for me to shop online for clothing usually. It’s like there’s too much stuff to scroll through, so unless I’m starting off with filters like “pants” “jeans” etc, I get analysis paralysis.
A well-designed catalog, by contrast? Oh hey I can amble through these pages and get ideas for how to assemble entire outfits!
It’s true, it is overwhelming, and you don’t even know where to start. Do you get banner ads from something called Temu? Schlock. It offends the senses. But they’re relentless and I’ve never seen the same thing advertised more than once, so they must have a vast sweatshop inventory. To what end, I don’t know, and I don’t know what I ever did to deserve this.
You could pull a Sutton Foster in Younger and pretend to be 20yrs younger. I would announce to my family “better brush up on your German because long lost Cousin Matthew has come to live with us.” We’ll spend our days cooking and feasting and gossiping over wine. Faithful Hound is welcome too naturally.
That’s very generous but at this point I look like a German who survived the collapse of the Third Reich in 1945. I don’t know what happened, exactly, and no one can tell me.
Just got out of my fourth zoom meeting – this was a nerve-wracking board meeting. I will need three or four of those chocolate goodies, please! They look delicious, and pretty too. I am a sucker for pretty.
Speaking of dogs, I want to adopt the poor 14 year old chihuahua at the pound, owner died, he needs me!!! But some people say no. Keitel is meeting the guys for wings and beer Saturday. I can only hope for massive, new dog worthy misbehavior. @hammerzeitgeist @matthewcrawley @keitelblacksmith

Yes, you must. I have a friend who makes a habit of adopting very elderly dogs. It’s very smart, because we have a habit of picking out puppies from the shelters, which I have to raise, and I’ve wanted to kill each and every one of them. Not really, that’s hyperbole, but not far from the truth. The zoomies. The chewing on everything. The crate training. The no-barking training. The “stop chewing on my ear while we’re sleeping” training. But it was all worth it. They are the best beasts.
And can I just mention that I was trapped in the apartment with these puppies (over time)? In retrospect, my stay-at-home mother with her brood was a saint. But you can raise different mammals as long as you have patience.
I used to be told that I would make a wonderful father. I find very small children to be very funny and I don’t mind changing diapers, but I’ve also been told by cooler heads that I’d be horrible because I’d be incapable of disciplining them as they got older. Would that be the worst thing? Actually, it would be, because I have young relatives…never mind.

Rum balls are the perfect holiday treat! Depending on which recipe you use the rum can cook off so you can taste it but the balls become non-alcoholic. Sort of. People in recovery shouldn’t really have them because the receptors in the brain become reactivated. I have no idea how this works but I have yet another new doctor, and we talked about drug abuse (it’s now called “misuse”) and I said, “I gave up smoking a decade ago and I used to drink pretty heavily, but I’ve never really done drugs.
