Food You Can Eat: Lemon-Almond Cookies

I made these as a nibble for a recent guy’s night poker party. They were light, subtle, and went quickly; I was glad that I had doubled the recipe.

Ingredients

  • ½ cup butter, softened
  • ¾ cup white sugar (plus more for topping)
  • 1 egg
  • 1 tablespoon lemon zest
  • 1 ½ teaspoons fresh lemon juice
  • ¾ teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ¼ cups all-purpose flour
  • ½ cup sliced almonds (or crushed)

Directions

Preheat oven to 350 degrees F.

Beat butter and sugar in a large bowl until fluffy. Beat in remaining ingredients, adding flour last, until just blended. Drop by rounded teaspoonfuls 1 1/2 inches apart on ungreased cookie sheets. Sprinkle with sugar or crushed almonds or add a sliced almond.

Bake 10 to 12 minutes until edges are lightly browned. Cool on cookie sheet 1 minute before removing.

These come out to 97 calories with 5g fat, 12g carbs, and 1g protein.

    • This is à propos of nothing but I had an outpatient procedure yesterday that took all day so I got lunch out of the deal and they threw in Lorna Doone cookies. Those Lorna Doones…I don’t think they sell them locally (hyper-locally to me) but I’m going to order them by the gross at some point. They come in little 4-packs and that is about a dozen too few for a single serving.

  1. If I were to cater a Guy’s Poker Night I would assume that any recipe would need to be quadrupled, no matter how few players showed up. I have hosted a couple of Super Bowl parties and a few Oscar parties and I thought I could gauge the appetites of the attendees but boy was I wrong. The food (and drink) situation was like shoveling coal in the engine room of the Titanic. “We’re sinking! We’re sinking! More coal!”

    How did you get your heads to format that way? You choose the text (or block) and choose which Tx format?

      And you are correct re guys and food. I also serve as bartender and the killed a 5th of tequila, 3+ sixes of beer, and some whisky. Wives/partners served as personal Ubers.

        Sounds like a quiet evening at home at the Casa Encantada! Just kidding. We’re more of a wine/gin/vodka household.
