Food You Can Eat: Shrimp Remoulade

As the old Drew Carey show had it, "Cleveland Rocks!"

Not what you would find at Galatoire's in New Orleans but tasty nonetheless

This recipe is excellent because it comes to us from the Cleveland Clinic, one of the country’s premier medical facilities. So it must be healthy, but not only that, I had a really good friend who moved to Cleveland to take a job with the Cleveland Clinic. We all thought he was nuts but he and his partner were able to buy a beautiful center-entrance Colonial in Cleveland Heights, or maybe University Heights, while we plebs were living like cockroaches in our rent-stabilized tenements. I visited them a few times. Who was the nutty one?

Ingredients

  • 1 pound medium peeled shrimp, seasoned and cooked
  • 2 tablespoons light mayonnaise
  • 2 tablespoons Creole or grainy mustard
  • 1 tablespoon ketchup
  • 1 tablespoon lemon juice
  • Dash hot sauce
  • 1/4 cup chopped green onions
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh parsley

Directions

  1. Place shrimp in bowl.
  2. In another small bowl, mix together the remaining ingredients and toss with shrimp. Refrigerate until serving.

  1. I had an attic apartment in Cleveland Heights. Those houses are so huge a lot of them had the top floor renovated as an apartment for students at John Carroll (me) or Case. $400 a month. …those were the days…
