Food You Can Eat: Spicy Pumpkin Bars

These were very tasty, but the texture was unexpected, somewhere between a brownie and a cake. This super-simple, quick recipe was adapted from Taste of Home.

Bar Ingredients

  •     4 large eggs, room temperature
  •     1-2/3 cups sugar
  •     1 cup canola oil
  •     1 can (15 ounces) pumpkin
  •     2 cups all-purpose flour
  •     1 tablespoon ground cinnamon
  •     1 teaspoon ground allspice
  •     1/2 teaspoon ground nutmeg
  •     1/2 teaspoon ground chili pepper
  •     2 teaspoons baking powder
  •     1 teaspoon baking soda
  •     1 teaspoon salt

 Frosting Ingredients

  •     6 ounces cream cheese, softened
  •     2 cups confectioners’ sugar
  •     1/4 cup butter, softened
  •     1 teaspoon vanilla extract
  •     1 to 2 tablespoons heavy cream
  •     Pecans for decoration

Directions

  1. In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. Combine the flour, spices, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. Pour into an ungreased 15x10x1-in. baking pan. Bake at 350° for 25-30 minutes or until set. Cool completely.
  2. For icing, beat the cream cheese, confectioners’ sugar, butter and vanilla in a small bowl. Add enough milk to achieve spreading consistency. Spread icing over bars. Refrigerate to harden-off frosting, and store in the refrigerator.

  1. Just in time for (American) Thanksgiving and a welcome alternative to pumpkin pie!

    I am being deserted this year by my feckless Life’s Helpmeet (he’s flying off to spend Thanksgiving with two elderly aunts, one of whom has dementia; he’s a good nephew but better him than me). I got an unwelcome invite to spend the meal with neighbors, but I think I’m only going to drop in for the dessert portion and may make these bars to bring along. Since even when we hosted large Thanksgivings I never made a turkey, I think I’m going to make a big vat of this for myself, cutting the recipe in half and getting (I’m guessing, because I’m a glutton) three servings out of it for myself.

    Since it will be Thanksgiving and I won’t be getting the hairy eyeball from the other human in this menagerie I’m going to let the hound break his diet and I’ll give him some chicken breast or something.
