Late last spring, when it dawned on us that Covid-19 wasn’t going anywhere, and before I started posting my mad Zodiac Killer-like FYCE contributions, I was going through my multimedia “recipe files”, figuring that our restaurant-going days were over, even touching takeout food induced panic, and we wouldn’t be having anyone over anytime soon. “Better Half, it’s so funny. Every single one of these brings backs a memory. I should weed these out. What do you think the worst thing I ever made was?” (Attentive readers will know that my repertoire extends far beyond the ordinary.) “How about the time you served veal to the PETA guy?” “IN MY DEFENSE that was [friend X’s] boyfriend of the moment and she didn’t warn me, and that was a bolognese. It’s not like I slaughtered a calf in front of him, as if PETA isn’t in the habit of euthanizing every animal they can get their hands on.” “How about that strawberry salad you make? I love it, but of all your crazy stuff I think that’s one that doesn’t always go over so well.” He was right. This started showing up on menus all over the place 20 years ago, at least, and there are various ways to make it.

(Recipe makes 2 mains or 4 to 6 side salads, should we ever have people over again)
1 lb. spinach, washed, dried, and torn
4 handfuls of fresh strawberries, probably about 1 lb., because we won’t be pawing through the strawberries to measure them this way
At least 8 oz. blue cheese or feta, that you will crumble, or 8 oz. block of Parmesan cheese, that you will shave
1 cup packaged almonds, walnuts, or pecans. Try to get toasted.
Some blueberries, I guess, if you live in Alaska
1 bottle of balsamic vinegar
Toss everything but the balsamic together. Then add as much balsamic as you want, and toss again. Refrigerate for a few minutes, because you want it to be crisp.
Unpopular opinion: Slice an avocado and top with that. This make for a very filling salad indeed, but we love avocados.
I think that looks lovely. Fairly sure that the carnivore won’t eat it, but maybe for me one night when I cook him meat. So pretty!

You should totally supreme either a mandarin (if you like sweet) or a lime (trust me, the zing is delightful!) and add it to your salad!
Or just use canned mandarin segments if you are less motivate to peel and slice.
