First Things First: This year, Mrs. Butcher wanted me to plant bok choy. I guess she was getting tired of cabbage-based stir fries and decided she’d rather have Chinese cabbage-based stir fries. Anyway, once it was ready to harvest I realized I didn’t have much of an idea what to do with it. So, I looked in a cookbook of recipes that Mrs. Butcher likes and made this for her.
A caveat before we get started: My onions are still growing, so you’ll see greens in there that normally wouldn’t be included. Also, I have yellow curry spice mix from The Spice House instead of red curry paste.
Here’s what you’ll need:
¼ Cup Oil
1 Lb. Chicken Breast
1 Lg. Onion, sliced thinly
5 Cloves Garlic, sliced
2 Tbsp. Ginger, minced
2 Tbsp. Red Curry Paste
1 Can Full-Fat Coconut Milk
3 Tbsp. Fish Sauce
1 Tbsp. Honey
2 Cups Broccoli Florets
2 Cups Bok Choy, sliced
1 Tbsp. Lime Juice
½ Cup Basil Leaves, sliced
Place the oil in a pot over medium heat. After a few minutes, sauté the chicken, onion, garlic and ginger until the chicken is browned and the onion is very tender. Then add the curry paste and cook an additional minute.

Then add the coconut milk, fish sauce and honey to the pot and stir to combine. Cook for about 10 minutes.

Add the bok choy and broccoli and sauté for another 5-7 minutes or until the broccoli is bright green. Add the lime juice and basil and give it another stir.

Serve over brown rice or cooked whole sorghum.
Most of the recipes in this particular book are hot garbage, but this one is actually pretty good. I even helped her eat it.
Coconut milk – I am often on the lookout for recipes which call for it. Looks delish!

What’s the cookbook so I can watch out for the hot garbage?
It’s by this charlatan named Dr Steven Gundry called The Plant Paradox Cookbook. He makes a killing on the internet scamming desperate people like my wife by selling them high priced placebos. Im just waiting for the day when he lands himself into a class action lawsuit when some batch of his sugar pills end up killing somebody.
First, cabbage is a superior vegetable to bok choy. You can tell the Mrs I said so.
Second, I would eat this dish. I bet it’s delicious.
To be clear, we still grew cabbage. We just used it for cole slaw.
So is your yellow curry spice sweeter and milder than a red curry?
