
Preheat your oven to 400 degrees. Cut four thick slices of any rustic bread (I used a kalamata olive loaf); bake for 4-5 minutes on each side until toasted. Remove from oven, set oven to broil.
Sauté 4 sliced, cleaned portobello mushrooms, 1 large sliced vidalia onion, and 1-each of red, yellow, and green bell peppers in a few tablespoons olive oil, until soft and cooked through, getting ready to brown, 10-15 minutes.
Mix in a generous tablespoon of flour, 1/4 cup of water, and 1 tablespoon each of soy sauce and Worcestershire sauce. Mix to coat and cook another minute or so, until the water is absorbed.
Divide the mushroom mixture over the 4 slices of toasted bread and top with a cup of shredded mozzarella cheese, divided among the slices. Pop under the broiler until golden brown.
Should you make this? Maybe? It is filling, simple to make, and even carnivores appear to like it.

Question: I’m surprised with the use of soy sauce, but I’m not from Philadelphia so if that’s what they use then I will allow it. Is that a typical ingredient for regular Philly sandwiches?
