Super simple, a good use of frozen homemade pesto or store-bought pesto. Also a good week-night don’t feel like cooking recipe.
Ingredients:
- 4 skinless salmon fillets
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 teaspoons olive oil
- 2 tablespoons unsalted butter
- 4 tablespoons basil pesto (or more, to taste)
Directions:
Heat your oven to 350, and line a baking sheet with foil. Sprinkle fillets with salt, pepper, and olive oil, and bake 10 to 25 minutes. Why the wide time variation? Just as with beef steak, preferences range from “cooked just enough not to get sick” to “kill it with fire”. You do you.
Mix the butter and pesto. I used more pesto that required because I have a ton of it frozen, from this year’s kitchen garden bumper crop of basil.
Plate your salmon and top with the pesto mixture. Serve at once.

Easy to do. It makes Salmon less tedious.
Salmon should only, ever, be cooked to medium rare. Any more and you should throw it in the trash because it’s not even fit for your cat to eat.
