What’s something lately that’s been good for you?

I have a ridiculous amount of kale in the garden, and it’s been delicious so far. I’ve eaten through all the lettuce (finally) and half the spinach, but goddamn has the kale done well. I think I’m going to end up chopping and freezing a bunch of it, there’s only so much I can eat and the weather isn’t going to cooperate for long without it getting too hot for it to be okay. Also, I want to free up that space in the garden so the stuff I’ve packed in there can have more space.

Anyways, making a kale pasta salad with either chickpeas or cannellini beans for lunches this week. It used up … half of one of my massive kale plants, of which I have three. Kale for daaaaayyyyyysssssss.

  1. You know what’s really good for me?  Kupus salata.  It’s a Serbian coleslaw thing and there’s like three ingredients.  It’s easy to make and rich in nutrients.  My stomach really likes it too.  I have it as a side with every meal, especially with my wife out of town.  Use good olive oil and apple cider or balsamic vinegar.

  2. My repairs lately have done really well. I replaced a turbo resonator in the van successfully, and spent the weekend troubleshooting the sprinklers. Thus far I’ve got things up and running pretty well.

    Also I ran a 10k yesterday about a minute-per-mile faster than I should have. I’m paying for it today, but I finished several minutes ahead of what I thought was reasonable to expect.

  3. I finally fixed my leaning trellis that was in the flicker post.  It was leaning pretty badly & took 4 bags of concrete to fix. Next project is taking out a stairway of railroad ties in the yard & making concrete steps.  That will be a major workout.  My wife’s dad’s house is finally sold so we can close out his estate.  That will end a ton of stress & family drama.
