I am currently marinating in a food coma because I went to a fried chicken joint for dinner and ate ALL THE THINGS.

On further contemplation, all of those appetizers scare me.
I’ve been craving soup lately so I think I’m going to make vegetable dumpling soup. I haven’t made it in probably a year and pillowy dumplings sound very good to me right now.
Tomorrow will be “cook ahead for the week” day. I am trying a new recipe for a heart healthy barley soup. And making a shrimp and vegetable bake, a stir fry, a seafood recipe, low fat cookies, and homemade dog biscuits.
I’m making a giant mess of tamales, mostly Mexican and a few Costa Rican. Most of them are getting frozen for closer to Christmas.
I don’t feel like cooking so probably salad.
I made soup tonight… had a packet of dried minestrone mix (spices, pasta, veggies) so I added that to homemade chicken broth with a can of tomatoes, a can of chunk chicken, extra garlic, and a small squeeze of habanero paste. Had to add more water in the end because it was very salty, but it was pretty good.
I have no idea what I’m making for the rest of the week… probably sandwiches and leftover soup tomorrow for lunch, and chorizo with corn and rice for dinner. After that… anarchy!
Just finished the Thanksgiving leftovers tonight and realized I can’t face another round of stuffing, potatoes and turkey for Christmas, so we’re going to have to think of something else.
Tomorrow, I’m making red curry with shrimp. One of my favorite dishes.
You could make a roast beef, that’s we used to do growing up. I’ll be serving beef on Christmas, but almost certainly something more elaborate.
We did lobster last year, for the specific reason that we wanted something really fancy but also didn’t want leftovers.

I kept thinking it would make sense and it kept not making sense!! I even googled it hoping the internet could explain it to me, but I am apparently not THAT fancy. I do really like Toni Collette tho.
ummm…i just chucked a store bought lasagna into the oven (hey dont judge…the ones from the aldi are surprisingly good..with a little cheese and chilliflakes on top)
okay okay…the fact im making it for breakfast at 11 am might be worthy of a little judging
Lasagna is such a pain to make that I think store-bought is smart. Plus they taste delicious.
Let someone else make the dishes and prep the food. Heat and eat is nice!
Lots of stuff from Aldi is good. For a long time in the US it had a reputation as a cheap/yucky place to shop. But now, if you aren’t shopping at Aldi, you’re missing out.

Absolutely nothing wrong with pasta for dinner. Have you ever had leftover pasta frittata? It’s usually made with leftover spaghetti noodles from the night before, eggs, butter, and bacon. Italians have been eating this for centuries.
ive made leftover frittata before…sortof…not usually with pasta
but adding 4-6 eggs and bacon to any leftover veggies i have and making a nice thick omelette is one of my favourite tricks to keep food waste down
Our stomachs were on the same wave. I had a fried chicken dinner yesterday, too. I love fried chicken, but I don’t indulge maybe once every two months because it’s fried chicken.
This week it will be homemade Chili.

The moussaka post reminded me of this super easy eggplant dish, it may be called pasta a la norma but I’m not sure, so I made that with ziti yesterday afternoon. I have lots of salad stuff in my fridge, too. Today is bread day, sourdough baguettes and sourdough english muffins, and I bought a tub of peanut butter so peanut butter swirl brownies.
For solstice I always make Boeuf Bourguignon, I do it in a slowcooker.
Kicked off the weekend Friday night with an InstaPot beef stew. Was very good. Thanksgiving leftovers are either gone or frozen to be used in soups/casseroles/whatever later.
Y’all got me CRAVING baked pasta, so I found a quick recipe online, and am making that before work….
The rest of the week, I’m not toooo sure about yet, BUT I do wanna do some freezer-cleanout, and I’ve got stuff I can toss in the crockpot for it… so probably some of that😉
