What’s on the menu this week? I’m making a fruit salad.
I’ll be making other food, too, but the only thing I really planned ahead on was the fruit salad. I also managed to be at grocery stores 3 times this week and forget to get either a block of cheese to shred or a bag of shredded cheese. So yeah, I’m kicking ass and taking names at basic memory skills LOL.
Oh! I picked a zucchini from the garden today. So I guess I’m cooking that with something this week. Probably sauteed with other veggies and then served with rice and beans.
Just sliced the tip of my left index fingernail off while slicing peppers. Fun way to end the vacation.

Is your finger okay? Hopefully you just added some extra fiber to the peppers but aren’t bleeding!!
Here’s an idea for the zucchini.
Cut the tips off and then peel it with a sharp knife or vegetable peeler.
Cut the zucchini into one inch chunks.
Place the zucchini in a blender and pulse it until it’s a puree.
Put the zucchini puree in a wire mesh strainer and suspend over a large bowl or the sink, and let all of the liquid drip out until you have a thick pulp.
Spread the pulp out in a very thin layer over a cookie sheet.
Place the cookie sheet into the sun and let the pulp turn into a powder.
Now, if you’ve done this correctly, the powder will have blown away with the first stiff wind and you won’t have any more zucchini.

Full disclosure, about 80% of why I planted the zucchini was to be a trap crop for the squash vine borers instead of them going after the butternut squash I planted several weeks later.
Which means probably instead of expecting to dig up dead zucchini in a few weeks, I’ll be up to my ass in zucchini all summer and leaving them on the neighbors’ porches.

For the next four days, I will be gobbling down delicious home cooked meals prepared by my grandmother. I’ve already had proper Bretzel, Speck, Spätzle, lentil soup and Wieners. Tomorrow is dim sum for lunch with my Mom’s side of the family followed by Schnitzel mit Kartoffelsalat. There is also promise of Leberkäse.
Oh wow, spaetzle is the best.

So not only are you of German descent, but maybe of southern German or Bavarian descent? A friend of mine had a Swabian (Schwäbisch) grandmother and she made the most incredible food. Say what you will about German food, a lot of it is delicious and in the south they love to eat. And drink beer.
Ya, my extended family lives near München. I always eat very well when I visit my grandparents in Toronto or family in Germany (it’s been almost a decade since I’ve been back).

I usually have food guarding issues but since my grandmother bought a whole piece of speck and it’s just me and grandfather eating it, I’m willing to share. Fly on over!
Zucchini bread for the win.
You know, I’ve never actually made zucchini bread. Mainly because this is the first time I’ve successfully grown a zucchini long enough to actually pick one!!!
I need to google some recipes now! Thank you for the idea!

One of my students brings me chocolate zucchini bread when her crop comes in. I don’t generally eat that sort of thing, but my wife goes nuts for it. I’ve tasted it and it’s heavenly.
