What’s Cooking? [NOT 17/3/24]

Happy Sunday! Happy St Patrick’s Day!

What’s on the menu this week?

If you’re in the US, are you making some variation of corned beef and cabbage? Are you making some colcannon? Irish stew?

Let me know if you have something that probably is reasonably local to you. For example, St Louis area has green snake bread. AKA a basic loaf of bread dyed green with food coloring and made wavy.

I don’t know how widespread this is, I hope not very. It’s not worth it.

Anyways, apropos of nothing related to St Patrick’s Day, it’s a black beans and rice kind of day for my house. Smells amazing cooking all afternoon.

  1. It has been a long week here at the Casa Encantada, and tomorrow is going to be worse. For dinner tonight I’m going to pull out a supermarket-bought roast chicken, slice and serve, and create a create a creamy, honey-based sauce. Then there will be a good supermarket potato salad as a side, which I will adulterate with some mustard and God knows what else.

    For dessert we have more of that very rich French vanilla ice cream, which I will top with crumbled supermarket-bought blond macadamia-nut cookies. The minute the ice cream and cookies come out the “Hawaii-50” episode comes on.

    • I almost grabbed one of those chickens yesterday, I should have. The convenience is so nice.

    • I ended up getting a rotisserie chicken because of you guys.

      Made roasted green beans in the air fryer and a side of potatoes.

        • I was thinking fried chicken, but I’d been eating a lot of crap food lately and reconsidered.

  2. I had a corned beef sandwich for late lunch. That counts as Irish?

  3. Ummm I made a Greek salad served in a whole wheat pita. Plus a tiny slice of low carb pistachio cake. But I am weary a green sweater and shamrock scarf and socks. My once a year attire . . .

  4. I made corned beef, boiled potatoes, mashed turnips and quick sauteed cabbage.

    I would have like to have made more corned beef, but it’s definitely not the healthiest thing to have pounds and pounds lying around.

    • It’s so tasty though!

      I need to check Aldi in a week or two to see if there have overstock they’ll discount.

  5. Making Cajun Ahi, garlic miso butter shitake mushrooms & asparagus tonight for the wife because she deserves it for surviving my family onslaught

  6. I ate a green salad. That’s as close as I got to Irish fare.

    • Yeah closest thing I did was chop up some lettuce, and that’s just the only literal green thing I ate today.

  7. Visited mom today.

    She was kind of spaced out, but she recognized me… sort of. She started talking about my wife (???) and how I should be nicer to her… (?????!??!?!?)

    Then she started talking about my sisters and how they disappointed her (well, that’s nothing new there, a reason why they fled the family home) but before it got worse, she then mentioned how proud she was of them.

    I just held her hand and smiled at her even though there were points I didn’t want to. She made a friend who apparently walks around the ward with her. I left when lunch began.

    I’m just glad the flood of phone calls from the staff about falls/issues/fights is down to a trickle.
