What’s cooking? [NOT 4/12/23]

I hope your Monday was decent to you.

What’s on the menu this week?

I’ve got a roasted veggie and chickpea salad as well as a sweet potato and black bean stew to finish off. I will be making that stew again, it was easy and delicious.

  1. I harvested the last of my peppers for the season & am struggling w/ what to do with way too many.  The hot ones are easy, freeze or dry them & use all year long but I have a ton of chocolate bell peppers & some giant red pepper that have no heat but look like a hot pepper.  I am making turkey chili right now & used some of them but they won’t survive long so need a better plan.  Open to suggestions

    • Suggestion:

      Do not grow peppers that are not hot.

      • They were both free seed situations & they wintered too well last season.  I’m not growing them again.

      • How did I manage to screw this up so that my Salt-n-Pepa contribution, unhelpful as it was, somehow…who knows. I’m off to bed. I need to watch the latest episode of “The Gilded Age” (I’ve already watched it) but it gives me an excuse to berate Better Half for not providing me with a suitable, although new-money and vulgar, spread at 61st and 5th.

      • That looks like a good option!

    • Shaq, if you’re feelin’ lazy & have some freezer space, you can just wash & dice your peppers, then spread ’em out on a parchment/wax paper covered cookie sheet and freeze the pieces.

      Once they’re frozen, shake ’em off the paper and into freezer bags, and then throw ’em into stuff you’re cooking (frozen) later on.

      I try to keep chopped peppers on hand *exactly* this way, because they’re so easy to freeze, and they hold up WELL texture-wise this way!😉💖

      • Lazy is my middle name!  I’ll give it a shot.

      • Ohhhh, that looks good.  Have you froze it before?  Biggest problem is the chocolate bells are small & cutting & deseeding is a bitch.

        • I haven’t personally frozen it but according to the internet it can be frozen for up to 3 months. Good luck with the deseeding…maybe keep the seeds in for added texture?

  4. I made a bunch of red lentil dal and Indian potato salad which will be fueling me for a couple of days.

  5. Well…I was planning to do some easy seasonal baking but for some reason the baking supplies like flour are not in stock at the local supermarket

    That’s a bit of a hiccup for my plans….

    Supermarket here have been running out of shit randomly since corona tho…. guess I’ll have another look on my way home
