What’s on the menu this weekend?
I made that fennel and white bean casserole and I’m waiting for it to be cool enough to eat. I baked it in my French oven since I could do the stovetop part in that dish, too. And why make more dishes if I can avoid it!
I made drunken shrimp earlier in the week. It was an excuse to sop bread in the garlicky broth, so good. Last night I made baked chicken chimichangas. I don’t like deep fried foods, too greasy. The tortilla crisped up nicely in the oven much to my surprise. I’m drinking wine for dinner tonight.

Observations – it’s delicious, but needs either to have a little less sauce or the eater needs a hearty chunk o’ bread to sop it up with when eating.
Also I slightly undercooked the fennel prior to finishing in the oven, but I guess good news is reheating will help with that.
Sauce is lemon juice, salt, pepper, a tablespoon or so of olive oil, half a cup of heavy cream, and a can of white beans all pureed together. So I feel like it will reheat fine.
Any excuse to sop up sauce with bread is a good thing.

I made some cornflake crusted baked tofu tonight that came out really well and I’ll definitely be doing again. Put it with some roasted veggies and rice with peanut sauce. Lildamnhero ate some of the tofu, so it was an all around success. Maybe I just need to put peanut sauce on more things – that boy would eat peanut butter at every meal if I let him.
I need to do a grocery order in the next day or two, so I’ll have to make some calls then. I think I’m going to try out some Brazilian black beans and collards at some point.
I’m making Garlic Prawns, a recipe from my favorite Mandarin Chinese restaurant. I’m taking pics for a future FYCE. The owner gave us all ingredients but not quantities so I have been perfecting it each time & getting pretty close though I am a cook by feel kind of person so don’t measure usually anyway.
I’m looking forward to that FYCE!
Today I learned that shrimps and prawns are 2 different things. I thought prawns were just really big shrimps.
Where I am still hazy is the prawn vs crawdad thing since the googles tell me prawns are freshwater critters.
well, I’m feeling dumb…
I also thought prawns were just a type of shrimp, or something close enough, I had no idea they were freshwater…
Although, I don’t think I’ve ever seen prawns with claws, so I guess that might be a big difference twixt them and crayfish then?
They look a lot like shrimp when cooked, like pretty sure I’ve never eaten them but if I did, I’d think WOW GINORMOUS SHMIPRS*
I’ve only eaten crawdads in fritters and as crawfish cakes. Too much work to shell and eat them when I’ve been at restaurants that sell them. I’m fat and lazy and my laziness extends to not wanting to do that much work to get at my food.
Also, the neighbor kids and me used to take a foam 7Eleven big gulp cup and go play in the open storm sewer to catch crawdads (the early 90s were a great time to be a 7 yr old!) so I don’t really associate crawdads as “thing I want to eat.”
*I went to a restaurant in college that had shrimp spelled as shmiprs on the menu. I can’t unsee that and ever since I’ve enjoyed calling them shmiprs (pronounced SHMIP-ers)
I used to catch crayfish in creeks as well. I think I ate one on a geology trip in college on a dare. I’m fairly certain that I’ve also had them as properly prepared food, but nothing really stands out as particularly memorable.
Mostly freezer clean out this week…boring!

currently baking some gnocchi. If that’s not enough, I’ll just open a can of soup, or eat a bunch of junk food.
was thinking of doing a “pizza casserole”, but that’s slightly messier, and I already have a mess in my kitchen to clean up, so maybe tomorrow or monday if I don’t feel like takeout either of those days.
Have you ever used gnocchi as dumplings in soup? Good!

The cinnamon swirl bread came out perfectly so you’ll see this one on FYCE at some point. Tomorrow, Mrs. Butcher is making her chicken and meatball soup
We’re making Serbian sarma tomorrow. It’s delicious, but with all that cabbage, you’re gonna want to maintain social distance from me for a few days.

We’re making some cevapcici to go with it and that’s my favorite. It’s street food in Belgrade, and cheap too. Real tasty. You can go out with two bucks in your pocket and get fed real well. Wash it down with slivovitz and then clear your calendar for a few days.
The wife starts teaching Tuesday, so this is gonna be the last Serbian soul food I get until the term is over.

was delicious….cept i cant actually eat a large kapsalon all by meself…..sooo..i got about half of it sitting in the oven waiting for me to get hungry again……which i wont for at least 3 days…lol
tbh…even a small kapsalon is a challenge for me….dont know why i keep thinking i need a large one…

Hmm… This is reminding me to give vegetarian poutine another go. I found a recipe before and it was ok, but it could have been better.
