What are folks eating this week? Anything fun? Anything different?
I made a lazy rice and beans with a bunch of veggies either fresh from the garden (hello, first sweet banana peppers and happy cayenne peppers, also a handful of borlotti beans in addition to the canned red beans) or oh shit that’s been in the fridge for a while…. (sure fresh corn isn’t normal but hey that ear needed to be used up, ohh look, shredded kale would be great to cook in there, too). Unfortunately I ended up way overcooking the rice because I was too zealous in the amount of veggie stock in there, but shrug it’s still tasty.
A three bean salad might happen later in the week, too. Mainly because it’s approaching that time of year where I want cold food and don’t want to use my stove much.
Oh, who am I kidding? I never want to use my stove much.
I made coconut rice for the first time in my life two nights ago, for Pescatarian Friday. Just for the hell of it. I wasn’t having a Trader Vic’s-style “Polynesian” dinner or anything. The recipe I used was a little bland, but there’s an easy way to spice it up. This is another teaser for an FYCE that I haven’t written yet.
I’ve been by myself since Friday so not motivated to cook but I just saw I had a whole thing of shitake shrooms about to go south so making those in some miso garlic butter. I’m pairing that with a chicken experiment. I’m mixing miso, black bean garlic sauce, gochujang & a farmers market chili oil sauce. Too spicy for my family but good for me baked on chicken thighs.
I am not a mushroom person at all, but I will say I had some amazing sliced shitakes tossed with some savory seasoning and put in an air fryer and then with a tangy dipping sauce. Highly recommend that treatment of them!
Tomorrow one of my best friends from Hawaii and his wife are coming over for dinner & I’m making penne ala vodka.
I hope you make an authentic version of this dish.
Ree Drummond, aka The Pioneer Woman from Food Network, has a popular recipe you could do. I’m sure some rando rich lady from Oklahoma or Texas or wherever totally makes it an authentic way!
I’ve been making the same version for years. It is basically crushed tomatoes, prosciutto, butter, garlic, vodka, heavy cream & red pepper flakes on top of penne. It is the only version I have made but very tasty & close to one I had at my favorite Italian place in Seattle.

It reminded me that Adele was inspired to write this, I think, because a guy left her. Same with Lady Gaga and “Bad Romance.” What were those men thinking? I mean maybe they were kind of difficult to live with, and their public personas don’t match their private ones, but imagine being the guy who can show up at some down-market Wetherspoons in a dreary part of metro London and say, “Yeah, well, Adele and I…”
One of my high school buddies dated Tia Carrere in high school & broke up with her! He didn’t think she was all that. He brags about it without bragging about it now if you know what I mean.

Exactly, she has a very well documented (by her) MO. Her love interests tend to be more muse than partner. While I don’t actually listen to her music, I do follow celebrity gossip. I’m happy for her to fuel her craft with misandry.

I’ve got chicken breasts in the fridge that really need to have something done with them, so that will happen tomorrow. Probably good ol’ baked herbed chicken and rice, because it’s simple and I can plop it in a pan in the oven and go sit down til it’s ready.
Yesterday was the crappiest of crap days, which culminated in sitting in the ER with KidSmacks3 for 7 hours, only to be told that none of the tests showed anything and they don’t know what’s wrong, so here’s some anti-nausea meds and go home. *sigh*
Oh no! That sucks and is stressful. I hope they start to feel better soon. When I was a kid/teen, I thought that doctors were infallible and had infinite knowledge of the human body and what ails it. How wrong I was.

My semi-annual order of Usinger’s sausage arrived last week. I’ve been enjoying their absolutely incredible summer sausage on my sandwiches.
Yum! Have you made a breakfast hash with it and topped with fried eggs? I love fried eggs on things.
Actually my favorite is their kielbasa, boiled and served with a fried egg. OMG it is fucking awesome.
I’m making this tomorrow. I’m not terribly excited by it. I might add more seasoning to spice it up.

Unrelated, but I secretly suspect that AI written content has already existed for years because every fucking cooking website is the same template and style. And I say this as someone who checks sites like Cookie and Kate and a few others. But the style…. always the same website.
I’m grateful they all added the “skip to recipe” button to their template. I hate scrolling through all impertinent bla bla bla and ads.
