What’s on the menu tonight/this week? Is anyone inspired to make cannelloni? I love baked pasta but also I’m lazy so recipes with steps beyond “throw cooked pasta in casserole dish and cover with toppings, stir, bake” are not something I typically make.
I was going to do a baked pasta because I have all the ingredients, but then I checked for what veggies in the fridge need to get used up so I think now it might end up just being a pasta salad and I’ll roast the veggies then toss everything with olive oil and shredded cheese.
No cannelloni but I am making spaghetti with Italian sausage & garlic bread. No idea about the rest of the week but Costco trip tomorrow might give me some clarity.
I am so tired of all my regular recipes. I don’t know what I’m going to eat this week.
My friend invited me to dinner next Saturday for his partner’s 60th bday. One of the guests is vegetarian so I’m in charge of a side. Taking any and all suggestions.

I asked them if he had any theme for dinner and his answer was “vegetarian”.
That looks delicious! My only comment would be that Korean food can overpower other less flavorful food. Would be nice to know what sort of things other people are bringing.
That does look good. I’ve been to vegetarian potlucks where the other food needs overpowering, so maybe it’s the right thing.
A local grocery store makes a variation on a three bean salad that I will happily eat for a meal

They add sliced celery and green pepper which really helps add additional crunch and flavor. Also tastes better after it sits for a while so convenient to make ahead.
