I hope your Monday is going well.
What are folks eating this week? It was a fridge clean out week for me – I realized I had a decent amount of stuff that was not going to make it another week without being used. So I made a chicken pasta with a ton of roasted veggies tossed in there. Also, more salads. Because like I mentioned the other day, I wasn’t using my brain nor a list when I went to Costco the weekend before and got home to realize I had more than enough avocados already and whoopsie-doo there was another bag of them I just bought.
Vacation is over in a couple of days and I’m craving veggies. So many french fries, but I’ve managed not to have one burger yet.
I’m typically desperate for veggies by the end of a trip.
Tomorrow, making 2-3 nights of Tandoori drumsticks using the air fryer.
If I were an actual home chef I would have made my “own” but being a lazy hack, I opened a jar of ready to use Tandoori sauce mixed with some greek yogurt and let the drumsticks marinade in that.
I think those jarred sauces are usually good, and it generally comes down to a little bit like adding more hot sauce or ginger to make them go from 75% to 90% of homemade.
The only issue I have with the jarred sauces is sometimes the sodium is way high. But that only matters if someone is sensitive to it/watching their sodium levels.
And even then, I’d be remiss if I didn’t mention I have no problem snacking on chili cheese Fritos…. which are also way high in sodium.
Chili cheese Fritos? This is the kind of thing that I love/hate about the new The Takeout. There’s very little commenter engagement, and God knows the blogger staff don’t respond, and there are the videos no one wants to watch, and the ads and kinja deals, and all the spon-con, but every so often, amidst all the Herb Spamfellow-forced crap, you get word that things like Chili cheese Fritos exist.
BH will be attending an industry confab. He’s leaving tomorrow morning, and returning on Friday night. He can’t be more excited, because he hated his high school and his college and his surviving family, so these are the only kind of reunions he attends. He likes to gaslight me by saying things like, “I’ll only be gone for two days.” “You’re leaving Tuesday morning and not getting back until late Friday night.” “Right. So I’ll only be gone for two days, Wednesday and Thursday.” “When I send you the bill from the rent boys, you can haggle over whether it was four days or two days. Buon viaggio!”
Oh anyway, since he’s going to be away for two or four days, depending on which calendar you use, my real one or his imaginary TARDIS, I am going to be experimenting in the kitchen. We have arranged that…actually, I’ll save this for an FYCE.
Well, stop at a bodega or CVS or wherever while he’s gone and get yourself a small bag of chili cheese Fritos!
I made @Elliecoo Harissa salmon recipe. It was a success and will be part of our monthly staple. Guess I was craving spices because I also made Khmer yellow curry with chicken and potatoes served with baguette (very similar to Vietnamese Ca Ri Ga). And finally chicken fajitas to finish off the leftover salmon ingredients (tortillas and toppings). I got my neighbor’s grain salad recipe and will make it once I source some Trader Joe’s farro (he swears it’s the best out there).

I had my usual salmon but sautéed some green beans with garlic for my side. I’m planning on a taco tomorrow night.
I bought way too much salad mix Saturday, and grilled way too much salmon on Sunday.
So, lots of salmon and salad. Roasted potatoes, roasted asparagus, steamed broccoli, and sauteed mushrooms as necessary.
That sounds good to me.
whatever i can force myself to eat at 5 before the yellow heat orb rises…so…probably toast…
and various salads….probably ice cream too
a cooked meal doesnt look likely for the next 2 weeks at least…well…maybe pre cooked for pasta salads or couscous…but definitely nothing warm
