What’s on the menu this week? [NOT 9/8/23]

Hi, friends!

What are folks eating this week? Are you making that pasta from yesterday’s FYCE?

I’m at the point in the summer of just making variations on pasta salads, burrito bowls, etc where I can use up a bunch of garden veggies since holy shit are the tomatoes coming in heavy.

    prolific little plants those

    baby toms for breakfast…courgette for dinner

    theres gonna be added stuff….but those two are a mainstay for a minute

      • i had baked potatoes, baby toms,courgette, carrots and peppers ..with runner beans and a veggi chicken schnitzel

        …with gravy

        not sure what they put in the breading for the veggi schnitzels….but its nice

  4. Last weekend, the Grocery Store had frozen Boneless/Skinless Chicken on sale (the 2.5-ish pound bags), for $3.99, if you bought 2, so I got two bags of chicken thighs.

    Put it in the fridge to thaw, and Monday night, I made butter chicken with one of the bags (got 2 packages of the sauce-stuff, and I also chopped up a few baby bell peppers, and a sweet onion–cooked those first, in some coconut oil, then the meat–cooked the meat in half of one of the packets, to add spices & flavor to the meat, and once the chicken was *mostly* cooked through, I added the onions & peppers back in, put the rest of the spice packet in, added the second packet &the water for both, then also added about 1/4c of peanut butter, to round out the flavors…

    Been eating that the last couple days, and tonight I’m gonna cook the other package “stir-fry”style, with some carrots, celery, and pea pods, in the Orange Chicken sauce from Panda Express (Target & Walmart carry it now!😄), so that I can have *that* on salads the next while.

    I saw the Orange Chicken sauce at the Grocery Store a few weeks back, and we also sell Chicken Tenders in our deli, so I got a few that week, chopped ’em up, and took the sauce to work to use as “dressing” on salads…

    It’s SO GOOD that way, nice & light on a hot day for lunch, but *also* has enough carbs/fats/protein, that it holds me over until i get home at 6:30-7ish, even though I’m eating at noon.

    So since the chicken was on special, and I already *had* the veggies on hand, i figured this would be great to cook up, freeze in small bags, then pull out of the freezer to throw on Salads, for the rest of the summer, when it’s gross & hot out😉

  5. I went on a snack date with a friend this morning. We drove out of our way to a bakery which makes croissants with imported French butter and then hit up a build your own bubble tea shop. It was the first time in a while that we both got to ditch our kids and hang out so we made the most of it.

    I don’t want to talk about cooking because my in-laws arrive tomorrow and it’s a stressful topic while they are in town.
