Hi, friends! Happy Sunday!
I hope your weekend went well and you got some good rest and relaxation.
Are you a fan of salads? Do you believe salads can’t exist without lettuce or greens in them? They can. That’s a trick question.
I’m in the time of year I call my salad days. Also known as oh shit all the lettuce and spinach is growing FAST and I need to chomp chomp chomp. Hence, massive salads every day. I need to yell at the neighbors next door and see if they want some fresh lettuce.
The good news is that I quite love salads, so this is no hardship.
Also, I’ve been introduced to some really good foods from having them in a salad. First time I had chevre? In a salad. Prior to that I thought all goat cheese tasted exactly like feta. First time I had figs? A goddamn work of art spinach salad with a strawberry balsamic vinaigrette, fresh figs, and candied pecans.
I made one of these a few years ago to keep my greens safe from rabbits.

I was late sowing this year and everything is still smaller than my pinky nail right now.
I have a raised bed with the 18 inch height chicken wire wrapped around it. Does not deter squirrels but does prevent rabbits.
Well, that or all the easy access clover and other plants in the yard for them to snack on.
I’m a never-lettuce kind of salad guy. Kale, cabbage, shredded brussels sprouts, like that. No lettuce.
You are defective and need to be sent back to the factory for repair.
Yeah, I get that a lot.
Is spinach acceptable or not enough texture and crunch?
Have you ever heard of a wedge salad? You take a head of iceberg lettuce, cut it into quarters, and drizzle with blue cheese dressing. You’d love it.
We grow micro greens year round for salads, in addition to the lettuces we grow each spring. The first ones should be ready in a few weeks.
Do you grow them under lights or do you have something like cloches?
We have a light rack with three shelves. So we can grow as many as six trays at a time.
I love sunflower microgreens!
