What’s cooking? [NOT 8/1/36]

Hi, friends! What’s on the menu this week?

I really enjoy cooking and I find it oddly soothing to do things like chop vegetables. I made a complicated meal to use up a lot of brain cells and help my stress at watching yet another day of this country go to shit.

What did I make? Sauteed cabbage with navy beans (that I started dry and cooked with a parmesan rind to boost flavor), butternut squash puree with smoky spices, and then sauteed chicken breasts in a pan sauce of veggies with mushrooms, white wine, and orzo (to soak up those pan sauces).

The butternut squash puree is disappointing, it’s more watery than I expected even after trying to cook off some of the water. Oh well, that was a new thing I tried and now I know to stick to mashed potatoes or mashed sweet potatoes.

  1. Sounds yummy. I made a Hello Fresh yesterday that had a side of bulgur wheat. Same thing, I think I didn’t cook enough of the water off. Also it needs a lot of seasoning to taste like…anything.

    • I had a fucking amazing bulgur wheat pilaf at a Turkish restaurant a few months ago that was heavily seasoned with tomatoes, garlic, and other spices.
      I haven’t tried to make bulgur wheat though.

      thats what im having tonight….well…assuming i get back home anyways
      weather says getting to work is challenging….getting back later ummm.. might be a case of walking it and cursing my life choices

    • My wife cooks 2 to 3 meals each year & 1 is lasagna. She used to make it by herself but when she realized we didn’t appreciate the Ragu or some fake sauce, I had to make the sauce for her. So even on my “night off” I still do the part that takes the longest.

  2. I made a bunch of beef stew last night & our neighbor gave us a loaf of rosemary sourdough. He makes really good bread & I put lots of rosemary in my beef stew so works great together. Tonight I worked late so not up to cooking much but my wife will just eat bread if I don’t cook something so I am making buffalo cauliflower so she at least has something semi-healthy.

    • I am not a fan of beef stew, but I think that’s because my dad would make it with chunks of chuck roast and then once it chilled in the fridge it got really jiggly wiggly from the gelatin in the beef.
      To be clear – I definitely love chuck roast broken in to big pieces and served over rice with broth or gravy which isn’t that far off from a thick stew. So there’s no consistency in my preferences here.
      Brains are weird.

  3. We’re still feasting on all the venison tenderloins a hunter friend gave us. That’s the best part of the deer, even better than the backstraps. Man it’s delicious.
