What’s on the menu this week? [NOT 9/4/23]

Happy Sunday! I hope the day went well!

What are ya eating this week? Anything different?

I got green garlic at the farmer’s market and my spinach is growing like crazy, so I cooked up a nice lazy pasta with tomatoes, peppers, that garlic, spinach, chicken, and goat cheese.

Spinach salad is also on the menu this week, LOL. I mean it, there’s a shit ton of spinach out there to start eating. It’s at the point where the leaves are almost as big as my hand, too.

  1. I ate too much today and feel gross. But I still want cheesecake.
    I’m probably going to eat salad the rest of the week to make up for overindulging today.

  2. Since Thursday, I’ve cooked:

    Salmon and broccolini

    Tuscan Marry Me Chicken

    Steak bites and green beans

    Chili with cheesy garlic bread

    I’m running out of motivation ideas to feed the in-laws every night. I would do spinach pasta but my MIL hates wilted spinach and I’m too stressed to eat salad. I need comfort food every night.

    • I’m so sorry that with all the adults there isn’t the joy of leftovers.

      You’re a better person than I am. I would be like “someone get a fucking rotisserie chicken at the store and a few bags of frozen veggies.”

      Or be like “here’s a big dish of baked mostaccioli/ziti.”

      I’m assuming there’s no chance of take out because you’d already be doing it. I’m sorry you’re stuck with this situation.

      • The chili has enough for leftovers. So at least that’s tomorrow night sorted. It’s hard to make a dish that feeds 4 adults twice over that isn’t some kind of casserole or stew. I’m not big into casseroles. Takeout is too expensive. It’s like 90$ on average for just us two plus the kids (with 20% tip). MegMeg inspired me to make Thai green curry and I can easily double the recipe (thanks!). Then maybe porkchops with brussel sprouts. Woohoo that’s my menu planned until Friday! Thanks for this thread. I was going to pawn off meal planning to my husband but don’t have to anymore.

  3. This weekend I made a coconut chicken curry. It was pretty freaking good, if I do say so myself.
    Other than that, I’m maintaining a steady diet of Girl Scout Cookies and cheese.

     

  4. skies are blue…its sunny as fuck….and if you stay out of the wind..you might even think its warm…

    and that makes me want to make a tuna pasta salad
